Kefir is my favorite additives to smoothies. Packed with more live probiotics for good gut health . It also boosts our immune system for winter cold/flue seasons
*I took 4 liters of milk in a large pot .
I added a tablespoon of gelatin to thicken it up and about 3/4 cup of heavy cream.
The milk I was using was lower fat content and I wanted a creamier result .
Slowly bring it up to 180c degrees. On medium heat .
If you don't have a thermometer it's just when you start to see bubbles wanting to burst from the top layer
You don't want a rolling boil or too hot as I've done that by accident and it kills the whole show.
Then set aside bring back down to around 25c that is basically room temperature.
If you took a little drop of it and put it on your inside wrist . It would feel neutral. Not cold or hot.
Then take a package of kefir .
I found it in the health food store
Add it to a little cup mix well .
Then stir back into your cooled down pot of kefir .
I save any jars
( like pickles ,pasta sauce ect )
Wash well - obviously 😉
Then transfer kefir mixture to the jars.
Put the lids on and just leave out over night for about 24 hrs.
You will notice that it will have thickened up nicely.
For next batches it will only get stronger in medicinal effects. Scoop out a few tablespoons will do with the grainy bits and save in a small jar . Put in fridge for next time as a starter.
Now you can keep that rolling over without having to purchase the grains again 🤗
